Vegan MoFo Day 4: Veggie Fajitas

Here's another one of my favourite after work quick meals - fajitas! This is a really loose recipe because every time I make it it's different (but always delicious!). It's also a great way to use up some of the veggies that come in our Spud delivery.

Veggie Fajitas
* A ton of your favourite veggies - I use bell peppers, broccoli, zucchini, mushrooms, tomatoes, onions and green onions
* black beans (canned & rinsed or cooked from dry)
* taco seasoning or fajita seasoning
* hot sauce (optional - I like chipotle hot sauce)
* whole wheat tortillas, small
* fresh cilantro (optional)
* pickled jalapenos (optional)
* salsa
* guacamole

Cut up your veggies into bite-sized bits and stir fry with the black beans until fork-tender. Season with taco or fajita seasoning, and hot sauce to taste if you're feeling spicy. Fill your tortillas with veggies & beans and garnish with jalapenos, cilantro, salsa and guacamole and dig in! Sometimes I make fajita bowls, where I don't use tortillas and just fill a bowl with veggies & beans and top with the garnishes. Mmmm, I'm getting hungry.

Vegan MoFo Day 3: Quick Thin Crust Pizza

This is my go-to meal when I get home from work late, or when I'm just too lazy to make anything more complicated. It's seriously delicious...

Quick Thin Crust Pizza
* 2 small whole wheat tortillas (look for ones without hydrogenated fats on the ingredient list)
* 2 tbsp vegan pesto, or more (make your own in the summer when herbs are cheap & plentiful & freeze in ice cube trays)
* sun-dried tomatoes
* mushrooms
* whatever other toppings your heart desires - I like to keep it simple
* garlic powder & red pepper flakes

Preheat your toaster oven to 350. Spread 1 tbsp of the pesto on each tortilla and top with sun dried tomatoes and sliced mushrooms. Sprinkle with garlic powder and red pepper flakes to taste. Bake for 5-8 minutes (less time for toaster ovens, more for conventional ovens). I like to wrap it up like a tube an eat it, but you can eat it however you like!

Vegan MoFo Day 2: Bandidas Taqueria

I love Mexican food! I really love it. Generally Mexican restaurants can veganize their menu items pretty easily, which is great. I've been hearing good things about Bandidas Taqueria on Commercial Drive & 12th Ave, but I hadn't had a chance to make it over yet. Then my friend Shaunna called and wanted to have dinner on Commercial somewhere. Yay, Bandidas!

Apparently I'm a little slow on the uptake, because everyone else has discovered Bandidas. We waited for about half an hour for a table, but it was worth the wait! They have a great menu, and pretty much everything can be veganized for an extra dollar. And they use Daiya cheese - yum! We shared chips, salsa and guacamole, and I had Dave's Enchiladas with enchilada sauce and salad, vegan. I'm salivating just writing about it! It was chipotle tofu and cheese in tortillas, topped with enchilada sauce and more cheese and baked. The side salad was beautiful and I cleaned my plate. Definitely not every day fare, but it was a great treat and I'll be going back for sure.

I checked out their brunch menu while I was there, and everything can be veganized! Everything! There's vegan french toast and hash, and you can even have a vegan benny. I am SO excited about their brunch!

Vegan MoFo Day 1: Beautiful BC is right! Van Isle Eats

Kirk and I went to Victoria for a little mini-vacation and we ate ate ate! Here's some highlights...

The first thing we did after getting off the ferry is to head over to Red Barn Market and pick up some bulk spices. I really miss Red Barn Market!

Then we drove into Victoria and went for lunch at Lotus Pond, an awesome little Buddhist vegetarian restaurant.  We shared the Hot & Sour Soup, Szechuan Ginger B (my favourite - and I can't find a place that has it in Vancouver), and Mixed Vegetables in Crushed Ginger. It was FANtastic!

 Hot & Sour Soup

 Man, I love Ginger B!!

After lunch we wandered the city and worked up an appetite again. We decided on Swan's for dinner. Swan's is a great little brew pub down near the water, located in the funky Swan's Hotel. Their food is good and their beer is amazing! I had a Portabello Burger with fries and a pint of Double Shot Stout, made with espresso from local roastery Caffe Fantastico. The burger was good, and the stout was sensational.

 My yummy burger. Check out the colour of that stout in the background!

After dinner we wandered down to Peacock Billiards to play some pool, and we randomly ran into our friends Warren & Dayna! We played a few games (pretty poorly, but it was fun nonetheless), then headed over to The Garrick's Head for a drink.

 Did I mention it was Halloween? Dayna is dressed as a cave woman, and
the rest of us went as ourselves (that's scary enough!).

Kirk and I were staying at the Fairmont Empress Hotel, 'cause we're fancy like that! Actually, we just got a really good deal and thought it would be fun to stay in the second-least-expensive room. We were right!

The BC Legislature is around the corner from the Empress, and is beautiful at night.

King sized bed... aahhhh.

The next morning we reluctantly climbed out of our king sized bed and went to John's Place for breakfast. John's Place is a Victoria institution, and for good reason. There is a huge, crazy selection of posters and photos on the walls, the best service in town, and good food too! I had the Vegan Burrito, which is new on the menu and a welcome edition (I used to have to get potatoes and fruit salad there for breakfast, even though they had vegan options for lunch & dinner). The burrito had tofu, all sorts of veggies, salsa and guacamole, and it was SO good! Yes, I know I'm not supposed to be eating tofu, but I make exceptions when I'm eating out, which is difficult enough as it is. I have probably cut my soy consumption down by 85% over the past six months, and I'm okay with that. Those of you who know me know nothing is black and white for me - I'm a shades of grey kinda gal.

 The burrito was huge and I ate the whole thing!

That afternoon we had to go up to Nanaimo to pick up Kirk's bicycle, which has been in storage in a friend's garage there for a few years now. While we were in the neighbourhood, we decided to go to Coombs, which is a funny little town about half an hour north of Nanaimo. It's best known for the Old Country Market, which has goats living on the roof. It was raining and the roof goats were nowhere to be seen, but we met up with some goats and a friendly rabbit in the back of the store.

 This rabbit was so tame! I love him.

All in all it was a really fun trip, and we ate our weight in awesome Island fare. This trip just reiterates my belief that Victoria is a great place for us to visit, but not such a great place for us to live...

29 October 2010

Hey there, stranger!

So apparently I haven't blogged since August! Holy crap! I've been working two jobs, plus freelancing and taking three classes a week, so free time is rare. For instance, I'm spending my free Friday evening doing laundry as I'm currently wearing my last pair of underpants...

I haven't been cooking much, but I have been crafting a bit. I'm really into crocheting amigurumi animals right now and have made a seal, an elephant and a giraffe so far. It's been a lot of fun. Photos? Sure - give me a week or so to get my crap together and I'll post some photos.

I have a plan to get back into blogging - peer pressure! November is Vegan MoFo and this year I'm participating. I'll be blogging about yummy vegan food every day in November (well, that's the idea, anyway), so buckle up!
